These are subtle and delicious espresso shortbread cookies. I used Scharffenberger 70% dark chocolate for the dipping. The recipe is here. Although the yield is far smaller than promised, that is a very good thing. You will not be able to stop eating them.

When I woke up at 4 am today and couldn't get back to sleep, I grabbed a book from the pile on my night table...it happened to be Taunton's Holiday Cooky book and that one was in it. Yum, even though I don't drink coffee.

I am NOT pleased with you.
It's better with superfine sugar. And I'd use their 82%. I use salted butter and add no salt.
For a double chocolate cookie, you could add a few tablespoons of cocoa powder just after creaming the butter.

I've seen a similar recipe for those called Java Eclipse cookies. Unfortunately, my husband also saw that recipe. Java Eclips is his specialty at work. Which means that I may end up having to make them for an entire staff of a small software company.
